Palermo is the capital of the Italian island of Sicily.
This town is  mother of pasta, home to Byzantine mosaics,  painted cupolas, Arabesque domes,  Palermo is the place to head to for an authentic slice of Sicilian life.

When the famous  writer Scott visited it, he was invited by the Duchess of Palma to attend one of her cooking lessons…

I arrived at palazzo. I used the door knocker   and I met the Duchess.

She introduced me to the other people that had to follow the  cooking lesson and participate to the delicious dinner in her very elegant and ornate dining room.

I was surprised. She was casually dressed and very friendly and she treated us like old friends.

We were just a small group. The class  began: she plucked fresh herbs in her garden and explained us why  they were such  important ingredients. 

Then we moved into the kitchen and  started to prepare the ‘Almond Milk Biancomangiare desert’.

Next up was to make Panelle, chickpea fritters  incredibly tasty! Making the Panelle was a fascinating process.

She showed us how to prepare the stuffing for the Ricciola alla Ghiotta –  The ingredients for the Ricciola alla Ghiotta are amberjack, olives and capers.

Italians make such tasty food with a minimal amount of ingredients! They are really incredible . To accompany the fish we prepared a delicious salad of f potatoes mixed  with sweet red onions and capers.

Then we made a very tasty pistachio pesto, to be served with  fusilli pasta, (it was divine!)
Finally we moved into the dining room where the Duke was waiting us. They provided us with  stories about the Palazzo and their family’s history. A great unforgettable experience….

The cooking class offers you the opportunity to try new culinary experiences. It aims at melting the knowledge of Sicilian cuisine with recreation, in a warm and cosy context. The Chef will help you, step by step, in preparing extraordinary dishes with intense taste and smells of our land. You will have a new experience, learning all the procedures that make every Sicilian dish appreciated all over the world for its intense and delicious flavors.
